Anybody have any good/easy tips to remove the dust caps on a 73 Ghia w/out damaging them?

prying simultaneously with a pair of "heel bars" usually works...

Yep. Although you'll want to remove the retaining e-clip (or cotter pin if it's really an oldie) for the speedometer cable first on the driver's side.
