Would like to be able to easily remove the belly pan to do oil changes and ramps seem like the best option. Any great recommendations out there?

I got some of those Rhino ramps, truck rated..

I have used them a few times, wide, and strong, still hate being under them

Another vote for the Rhino Ramps. Lightweight but strong. Just high enough to slide under.

Does this put the front end of a Eurovan far enough off the ground that you can remove the belly pan? When I borrowed one set that are similar to the Rhinos mentioned by the first responder I could lower the pan but not get it to come off the rear hinges.

My bottom cover is already off, so cant say, it was difficult up on jack stands to take off.

Yes. I have the Rhino Ramps, and my 1995 Eurovan has an aftermarket belly pan. The pan is easily removed/re-installed when my van is on the ramps.
